6 Pork Chops
2 Tbsp Vegetable Oil
2 cloves Garlic
1 large, chopped Onion
1 large, chopped Green Pepper
2 tsp Chili Powder
1 cup, uncooked Rice
1 cup Tomato Sauce
1 1/4 cup Water
1 tsp Salt
1 tsp Pepper

A spicy and fragrant casserole, which is easy to make and clean up. I usually double the rice, tomato sauce, water, salt and chili powder.

Don’t like bones? Pork loin or chicken breasts work just as well!

In a saute pan, brown pork chops in oil.

Saute onions, green peppers and garlic until the onions are transparent. Then add chili pepper and cook for 2 minutes.

Add remaining ingredients and bring to a boil.

Pour into casserole dish and arrange pork on top. Cover dish with lid or aluminum foil.

Bake at 375 F for about 1 hour or until liquid is absorbed.
